White Chocolate with Caramel Zephyr 37.1% Barry Callebaut. Pack 2.5 kg.
A fine white chocolate that combines a delicate sweet taste with an extraordinary caramelised milk flavour. Premium white chocolate, Zephyr Cacao Barry is the high-class range in the chocolate sector.
Recommendations for use: mousse, icings, mould moulding and for Chocolate Fantana.
Flow: maximum 5 drops
Ingredients: cocoa butter, sugar, whole LAPTE powder, skimmed powdered LAPTE, ZER powder (LAPTE), caramelised sugar 2.0%, emulsifier: SOY lecithin, natural vanilla flavour, salt.
Transport above 25°C may cause melting of chocolate and bloom (white deposits). Changes are aesthetic and do not affect the quality of the product.
