White Chocolate with Caramel Zephyr 34% Barry Callebaut. Pack 2.5 kg.
Produced from West African Forastero variety cocoa beans, this white chocolate has a delicate texture and a strong milky flavour. Zephyr Cacao Barry is the high-class chocolate range.
Recommendations for use: mousse, icing, moulding, ice-cream, ice-cream and for the Chocolate Fantana.
Flow: 5 drops
Ingredients: sugar; cocoa butter; whole milk chocolate powder; skimmed milk chocolate powder; emulsifier: SOY lecithin;
Transport above 25°C may cause melting of chocolate and bloom (white deposits). Changes are aesthetic and do not affect the quality of the product.
