Thanks to its medium fluidity, this chocolate is ideal for pralines, ganache, mousses, creams, glazes, chocolate figurines, cakes, pastries and frozen desserts. It performs excellently when melted and tempered, ensuring a shine, texture and stability comparable to those of a classic chocolate.
