Premix Mouse Neutral Flavour is a powdered product free from gluten, eggs, hydrogenated fats, preservatives and palm oil.
How to use: In a bowl, mix 100 g of premix with 100 g of milk at room temperature. Stir for a few seconds and leave the mixture to rest for a few minutes. Next, add 400 g of cold cream and use an electric mixer or planetary mixer to blend until you get the desired consistency. To customise the taste, you can add flavoured fruit pastes or ingredients such as hazelnuts, pistachios or gianduia. If the mousse becomes too thick, thin it with a little cream. For a sweeter touch, you can add icing sugar to taste. Once the mousse is ready, you can use this mixture to fill desserts or freeze it in silicone moulds to make a semifreddo custard. It can be used either as a cake filling (to be served at +4°C) or as a frozen semifreddo (to be served at -12°C)
Ingredients: glucose syrup, sugar, maize starch, dextrose, skimmed milk powder, coconut oil, glucose syrup, milk proteins, thickeners: sodium carboxymethylcellulose (E466), sodium alginate (E401); acidity regulator: sodium phosphates (E339); stabiliser: potassium phosphates (E340); emulsifiers: acetic acid esters of mono- and diglycerides of fatty acids (E472a), mono- and diglycerides of fatty acids (E471).
