Dama Top is a sugar paste specially formulated for coating, with a wide range of uses and a bright white colour.

Features:

• Thanks to its special formula, it is ideal for covering confectionery products as well as for creating decorations.
• Dama Top differs from other types of sugar paste in that it is more elastic, making it very suitable for very light cake covering.
• With its high elasticity, it can be rolled out into a very thin layer.
• It is also ideal for covering products thanks to its excellent resistance to moisture.
• It has a very pleasant taste and aroma.
• Usage:
• The paste has the ideal consistency to be used straight away, but to make it easier to shape, it needs to be prepared beforehand.
• Remove the desired amount from the packet and knead gently, by hand or with a stand mixer (using the dough hook or paddle attachment) on a low speed, for long enough to soften the paste.
• Alternatively, heat the paste very carefully in a microwave on a low setting for a few seconds, until you achieve the desired consistency.
• Close the packaging carefully after each use!

Coating cakes or other products:

• Roll out the paste to the desired thickness.
• If necessary, you can sprinkle a fine layer of cornflour or icing sugar onto your work surface.
• When covering the products, take great care to ensure the paste adheres properly to all surfaces of the product.
• Colouring Dama Top paste

It can be coloured:

- throughout the mass, using gel colourings;
- on the surface, using an airbrush or brush and food colourings.

To achieve the best results when colouring the whole batch, mix the gel colouring into a small portion of the paste and then incorporate this into the rest of the mixture.

Ingredients: sugar, glucose syrup, vegetable oils and fats (palm, coconut), water, humectant: glycerine, thickening agent: E415; acidity regulator: citric acid; flavourings. May contain traces of milk, sulphites, nuts or derivatives.
