Premix Top Macaroon Topping Powder, 2 kg.
The HoReCa range offers fast and efficient solutions for preparing high quality desserts in a very short time. The perfectly balanced recipes allow minimising the number of steps and ingredients needed to create a full variety of desserts while maintaining high quality standards.
Preparation:
- Macaroons Top 1kg
- Water (room temperature) 190 ml.
Mix the product with water in a planetary mixer using a paddle attachment on medium speed for 3-5 minutes.
The product can be coloured with suitable water-soluble powdered food colouring powder mixed with water if desired. Pour the mixture into a small, straight-tipped piping bag. Apply with the piping bag to the appropriate silicone mat and leave at room temperature for at least 20-30 minutes, until the surface of the macaroon is opaque and non-greasy. Bake in a static or convection oven at 135 °C for about 15-17 minutes at the lowest fan speed with the tap turned off. Rest times as well as cooking times and temperature may vary depending on environmental conditions and equipment.
Ingredients: sugar, almonds, egg white powder, starch, modified starch, emulsifiers: E 472a acetic acid esters with mono- and diglycerides of fatty acids, E 472b lactic acid esters with mono- and diglycerides of fatty acids, dehydrated glucose syrup, skimmed milk powder, baking powder: E 500ii sodium bicarbonate, antioxidant: E 300 ascorbic acid, salt, stabiliser: E 415 xanthan gum.
