Recommended recipe:
1 kg White wheat flour 550/480
250 g Premix doughnuts
6 g Pakmaya fresh yeast
500-520 ml water
80 ml oil
Method:
Mix all the ingredients for 6 minutes on low speed and another 8 minutes on high speed, until the dough is sufficiently kneaded and elastic. The resulting dough is left to rest for 10 minutes, then divide into 60-65g and shape. Bake the doughnuts at 35°C and 75-80% relative humidity for 50-60 minutes. The dough doughnuts are left for 10-20 min at room temperature until the dough forms a thin crust. Fry the doughnuts in an oil bath heated to 170-180°C for 4 min (2 min + 2 min).
Ingredients: sugar; whey powder; white wheat flour 650; wheat gluten; wheat gluten; powdered egg white; iodised salt; soya flour; raising agents: sodium bicarbonate, disodium diphosphate; emulsifiers: esters of mono and diacetyl tartaric acids with mono and diglycerides of fatty acids*; sodium stearoyl 2-lactylate (0.6%); mono and diglycerides of fatty acids; vanilla flavour; colour: beta-carotene; flour treatment agents: ascorbic acid, cysteine; enzymes.
