Description
Artisanal ice-cream base with cold preparation, Totalbase 150, 1.5 kg.
Cold prepared bases are practical and quick to use as they do not require any pasteurisation process. It is sufficient to mix all the ingredients and add the mixture to the ice-cream machine, but not before flavouring it according to your preference/preference.
For best results, it is necessary to leave the liquid mixture to mature in the refrigerator for at least 30 minutes before final preparation.
Totalbase 150 can also be used warm.
Cold/hot preparation:
For milk based ice-cream:
- Totalbase 100 g
- Sugar about 220 g
- Milk 1 litre
- Flavouring paste - according to preference / taste.
For fruit based ice-cream:
- Totalbase 80-100 g
- Sugar about 300 g
- Water 1 litre
- Fortefrruto PreGel 100-120g Fortefrruto PreGel flavouring paste.
Ingredients: Dextrose, fully hydrogenated vegetable fat (coconut), dehydrated glucose syrup, skimmed milk powder, emulsifier: E 471 mono and diglycerides of fatty acids, E472a acetic acid esters of mono and diglycerides of fatty acids, E472b lactic acid esters of mono and diglycerides of fatty acids, E477 propane 1,2-diol esters of fatty acids, stabiliser: E412 guar gum, E410 locust bean gum.
Gluten and palm oil free.
