The hot made bases involve a production process consisting of 2 main phases: pasteurisation of the neutral base composition and freezing it after flavouring according to taste/preference.
Sublime 100 base is recommended for professional use.
Hot preparation in pasteuriser:
- Sublime base 100 g
- Sugar about 220-230 g
- Milk 1 litre.
Ingredients: skimmed powdered milk, maltodextrins, emulsifier: E471 mono and diglycerides of fatty acids, E473 sucrose esters of fatty acids, dextrose, stabiliser: E401 sodium alginate, E410 locust bean gum, E466 carboxymethylcellulose, E412 guar gum, vegetable proteins, flavourings.
