Description
Sosa Nappage X58 Pectin is a low-methoxyl amide (LMA) pectin, specially formulated for the production of gelled glazes, creams and creamy preparations. Gelling occurs in the presence of calcium, which enables the production of glazes with a uniform texture and a glossy finish, including those with a reduced sugar content.
Nappage X58 pectin can be used in preparations based on dairy products or other calcium-rich ingredients and is suitable for glazes, creams and crémeux. The resulting preparations can be frozen, and the gel is thermoreversible at temperatures between 40 and 60°C, meaning it can be melted and reformed through controlled heating.
To use, mix the pectin with the sugar, then add the mixture to the preparation and bring to the boil. For proper gelation, the pH of the preparation must be greater than 4.
Recommended dosage:
- Gelled glazes (nappage): 1.3–1.5%
- Creams and creamy preparations: 1–1.3%
Ingredients: amide pectin (E440ii), sugar, stabiliser: disodium diphosphate (E450i), acidity regulator: tricalcium phosphate (E341iii).
