This premix is very versatile because, depending on the amount of water used, a more consistent or more fluid composition can be realised.
The Royal Icing is used for fine decorations on cakes, cupcakes, biscuits or other desserts, using specific techniques.
It can be mass coloured using water-soluble gel or powder food colourants.

Decorations made with Royal Icing can be coloured by applying on their surface:
- powder food colouring, using decor brushes;
- food colouring powders or gels, diluted with a little food alcohol, water or oil (depending on the type of colouring chosen), using decorating brushes;
- liquid, water-soluble or fat-soluble food colourings, using an airbrush.
