Premix Neutral Flavour Gelling-Gelling-Greasing Compositions Fiordica Gel Evolution, 1.5 kg.
PreGel offers a wide range of properly dosed products for confectionery bases. These products are designed to save time and resources, while ensuring end products with optimal flavour and texture characteristics.
All the solid ingredients are already perfectly balanced, requiring only the addition of a few extra ingredients to create high quality finished products.
Fiordica Gel Evolution is a gelling, thickening and stabilising product, ideal for all cold desserts such as mousses, Bavarian creams, panna cotta and fruit jellies. Its texture is solid and resistant to cutting and its flavour is neutral.
Cold preparation:
- Fiordica Gel Evolution 130-150 g
- 200 g water
- Whipped cream 1 litre.
Dissolve Fiordica Gel Evolution in water, then whip the whipped cream. Gently fold the whipped cream into the Fiordica Gel Evolution until creamy and homogeneous. Flavour as desired using Paste PreGel Classic or Pannacrema in the recommended doses.
Refrigerate the mixture for at least 1 hour to stabilise the product. Store and serve the dessert at +4°C. If necessary, the dessert can be stored at -20°C and then returned to positive temperature before consumption. Fiordica Gel
Evolution can be used as a stabiliser for whipped cream, whipped cream, aspic jellies and panna cotta at an indicative dose of 100-150 g/kg depending on the desired recipe.
Ingredients: sugar, dextrose, bovine gelatine, stabiliser: locust bean gum E410, flavours.
