Agar Agar is a food additive acting as an emulsifier, stabiliser, thickener, filler and bulking agent.
The product is presented as a fine, tasteless powder.

Agar Agar, also referred to as Agar or Jelly, is an organic product extracted from red seaweed off the coast of Japan.
Created in Japan, around 1660, under the name of kanten, it is used in food, acting as a natural gelatine.
Agar Agar has a very high gelling power and successfully replaces gelatine of animal origin, being considered the best gelatine of vegetable origin.
Agar Agar contains iron and potassium and aids digestion.
Products made with Agar Agar can prevent and combat constipation, but moderate consumption is recommended due to its laxative effect.
Agar Agar does not contain carbohydrates, calories or fat, and is also indicated in diets.
It can also be used to replace flour or starch in the thickening process of cream soups, sauces, etc..
Being a product of vegetable origin, natural and healthy, Agar Agar is used in creams or liquid products, as a gelling agent, soluble in hot.
Usage:
- Agar is insoluble in cold water, it dissolves, when hot, in preparations containing water.
- Agar Agar-based mixtures must be brought to boiling point and the gelling effect of the product is obtained after cooling.
- Gels, Jellies or other preparations obtained with the use of Agar Agar will gel if heated to temperatures above 80°C.
- The gelation process with Agar Agar is thermoreversible, i.e., we can gel and liquefy the gel repeatedly without reducing its qualities.
- Depending on the quantity of Agar Agar used, it is possible to obtain preparations with different textures: concentrated syrups or nectars, mousse / foams, puddings, creams, jellies and softer or harder jellies and icings...
- Agar has the ability to absorb more water than gelatine of animal origin, so one teaspoon of Agar Agar is equivalent to 6 teaspoons of gelatine.
