Dextrose (Crystallised Glucose) is a white crystalline powder with a sweet taste, free of foreign flavours and aromas, well soluble in water. This excellent sweetener is produced by hydrolysis of various types of starch. Dextrose has proved to be the best in ice cream production, as it lowers the freezing point, thus increasing hardness, does not mask the taste and flavour of other ingredients, it is advisable to use it in the manufacture of juices, cocktails, liqueurs, fruit preserves.
