Description
The Manual Lira is designed for cutting hard products, even those containing almonds, hazelnuts and dried fruits, as well as for portioning cream cakes, hazelnut chocolate, soft nougat, ganache, small pastries (mousse, semifreddi, bavaroise), jellies, biscuits and marzipan.
The cutting base is advanced manually by means of a handwheel which allows manual speed adjustment during the cutting phase. All components that come into contact with food are made of AISI 304 steel in compliance with current food regulations.
The base can be disassembled for easy cleaning and is dishwasher safe.
Its cutting capacity allows portioning of products up to 6 cm high and frozen to -15°C.
