Description
Electric spray gun for coating surfaces with chocolate, cocoa butter, toppings or other icings/syrups.
It connects directly to the 220 V mains without the need for an additional compressor.
The gun is used to obtain the chablonage effect (velvet effect, like the one obtained with DV sprays).
Recommended dosage: 60% cocoa butter pieces or powder which must be melted at 38/40°C, + 40% tempered chocolate + fat-soluble colouring of the desired shade.
A liquid mixture is obtained which is sprayed in a spray gun on a surface (Bavarian or mousse-foam type) which must be necessarily cold (taken out of the rapid cooling machine).
In this way the cocoa butter crystallises on touching the surface and the velvety effect is created.
The composition you spray can be:
- melted chocolate with added cocoa butter for fluidisation;
- melted cocoa butter with added fat-soluble colouring;
- icing or other similar icing
- various syrups for finishing cakes or other confectionery products.
Tank capacity: 0.7 litres
Accessories included: 2 nozzles and a stainless steel extension with 45⁰C angle.
