Set for the creation of Monoports.
It contains: 1 Pavoflex Professional Pavoflex mould, made of food-grade platinised silicone and 1 cutter with 2 cutting heads.

Silicone mould has 12 cavities.
Volume: 67 ml/ cavity.
Dimensions Silicon mould: 30 x 40 cm.
Cavities dimensions: 9.3 x 6.2 x h 1.5 cm.
Cutter size - each end: 7.9 x 3.5 cm and 11.8 x 8.7 cm

The Pavoflex mould is ideal for sweet or savoury, baked or frozen products.
The mould can withstand temperatures between - 40⁰C and +280⁰C.

This product was developed by Pavoni Italia together with Pastry Chef Gianluca Fusto.
"The MONO project offers confectionery and restaurant specialists a complete kit for the realisation of desserts with a height of 2 cm, fixed on a base with a wider surface and reduced volume.
With this new working technique, sweet creations with an original aesthetic can be realised.

The kit is quick and easy to use:
- with the cutter you obtain both the dessert base and the insert, both by cutting out the 2 moulds, from soft or biscuit dough;
- the silicone mould is used to obtain the "heart" of the dessert.
