Description
Sanatine Dawn Universal Stabilising Premix is an essential ingredient for stabilising and improving the structure of various pastry and confectionery products. It is ideal for creams, fillings, whipped cream and other preparations, providing long-term consistency and stability without compromising taste or texture. Thanks to its versatile formula, this stabiliser can be used in a wide range of applications, helping to prevent separation of ingredients and keeping desserts fresh.
Preparation: dissolve 50 g of Sanatine Neutral in 100 ml of lukewarm water, after dissolving, add 60 g of sugar and approximately 60 g of compound (such as a fruit puree or other flavouring). The resulting mixture is gradually incorporated into 1000 g of unsweetened cream, adding one third of the cream at a time and stirring carefully to obtain a smooth, aerated consistency.
Ingredients: sugar, gelatine, modified starch (potato).
