The micro-perforations help keep the pastry stuck to the edges of the ring and allow for optimal heat transfer to the product, ensuring perfect and even baking.
For optimal heat transfer to the tarts and to ensure perfect baking, we recommend using the following when baking tarts:
- perforated baking trays;
- micro-perforated silicone mats.
This will ensure that the bases of the tarts have the same appearance and characteristics as the edges.
